I'd imagine peas would be quite easy to do indoors mate you can get short varieties. Sweet potatoes should be easy enough too if you eat them already.

I do microgreens on rotation. Rambo radish, mustard and coriander and the winners in this house. Grab some cheap trays from the amazon and use a bit of coir, job done and ready to eat in a week(ish).
Maybe look into baby leaf growing too?

Lettuce in hydro drainpipe set ups (Herbalist mentioned that on the other page), make a feature of it and get some blurples out! :running-around:
DWC a HUGE tomato plant in the fish tank?
Grow a cucumber in the dog's butt?
If the kids don;t move much, sprinkle them with cress seeds and water them, few spuds in their ear holes too?
