Rik's Ginger & Chocolate Cookies.

To do this recipe you have to have some form of canna butter or sugar to add. I will base mine around my most up to date recipe.

I have been playing around with tastes for a while and these seem to be the tastiest yet, unless you hate ginger, it’s a little like marmite, you either love or hate it. But I find that the ginger goes well with the taste the ABV butter gives to the final product.

This is really simple to do, as long as you can give a little elbow grease for mixing and get your hands a little messy balling up the dough at the end, you’re all good to go.

Here is an ingredient list:
  • 250g Canna Butter
  • 250g brown and caster sugar
  • 2-3 Table Spoons of stem ginger
  • 2-3 Tea Spoons of ground ginger
  • 2 Eggs (unless you wish to make hard (twice cooked) thin buscuits
  • 400g plain flour
  • 1 Tea Spoon of each Baking Powder/Soda
  • 100-200g Cocoa
  • 70% Cocolate, large bar
Ensure you leave the butter out overnight, as if you get straight out the freezer or fridge where you keep your butter it will be too hard to cream up.

So:
  • Cream the butter and sugar together
  • Add both ginger from list
  • Add eggs
  • Seive Cocoa and flour into bowl
  • Add slowly to mixture until a dough
  • Pre heat oven to 180 degrees
  • Shape in the way of your choice
They usually take around 10-15 minutes to cook in a good oven.

To offset the acidity and create a better end product, I have started using mollases/muscovado sugar in this and also one teas spoon of baking powder and one teaspoon of soda.

Seems to work very well with the stem ginger and ground ginger.

Mmmmmmm

This creates a softer, more palatable cookie πŸͺ

Another 4 rounds. 1KG of cannabutter. It isn't as strong as previous but you never know in cooking. I had to throw some stalks and leaves in to make it all up.

Just thought I'd bump the topic :barmy: ........and update any changes in recipe later. I needed to look up this in my bookmarks to refresh my memory.
