Mo does your rice wash phase always foam at the top? I think mine might be ready but it looks way more tame than your bubbly concoction.

I know it has to be full fat and organic milk Mafoo if that helps. Mine split in a cottage cheese like layer and a opaque water on top.

Im gonna try it with storebought whole milk. Nothing fancy just see how it goes.

I was actually asking about the rice water phase before mixing with milk. Does the rice water need to start foaming before its ready? I have seen some videos where theres just a small film on top and the folks say its ready to add to milk

I think the foam is a by product of what we are looking for. this stage just follow your nose buddy. it should smell like sour dough when its ready. kinda sweet, kinda tang to it

shop whole milk works fine. doesnt need to be anything fancy just needs to have the lactose to feed the bacteria we are after

Well off I go with attempt # 1

60 oz whole storebought cheap milk dosed with 6 oz of 5-day fermented rice wash water

I need a turkey baster because I did not enjoy pipetting 6 oz of rice wash 1 ml at a time... but its what I had. Curious if I could have gotten away with just pouring out of the jar but for now, its done.

We wait 5-7 days and see where we r at 🤘

Well I think this first attempt worked out!

Curds on top

2-phase separation

Image

LAB serum/whey

Image

Curds in a pan. Heated on low til they melted together and salted.

Image

Soft cheese. Tastes good tbh. Will be good on toast or used with jam or just with crackers.

All packed up and ready to use 😃

It's a good feeling to make use of everything, do a little science and make something useful for gardening, cleaning, you.

It keep's for ages too. Even longer mixed with mollasses sugar/raw sugar.

Depends what you're using it for I think.
